Eddie Lassides, also known as Eddie the Greek, is the founder of the Trocadero, a storied bistro in Dublin that opened in 1957. His Greek Cypriot heritage brought a touch of glamour to the restaurant scene at a time when international cuisine was still emerging in Ireland.
