Eileen Gibney

Eileen Gibney is a professor of nutrition at University College Dublin and the director of the UCD Institute of Food and Health. She has a keen interest in the complexities surrounding food processing and its implications for public health. Recently, she oversaw the publication of 'In Defence of Bread,' a book authored by her late father, Mike Gibney, which critiques the negative perceptions of ultra-processed foods and the scientific foundations of public health guidelines related to them.
