
José Roldán
José Roldán, a 36-year-old master baker from Córdoba, Spain, has recently been awarded the title of World Baker of the Year 2025 by the International Union of Bakers and Confectioners (UIBC) in São Paulo. Recognized for his technical excellence, creativity, and innovation, Roldán has a rich background in baking, having grown up in a family of bakers. He has traveled across Europe for training, including in Brazil, France, and Switzerland, and holds a degree in Economics from the University of Córdoba. With numerous accolades to his name, including being crowned Champion of the World Bakery in Rimini, Italy, in 2023, he currently serves as a technical director at El Brillante bakery in Córdoba, where he also dedicates time to teaching aspiring bakers.
