She began her baking journey in 1976 at the Lilac Continental Patisserie, where she learned to make the Hastings meatball, a beloved regional delicacy introduced by Dutch patisserie-chef Gerard Denijs. Along with her husband Les, Katie has played a significant role in the local culinary scene, operating their own bakery, Nutmegs Pastry, which became famous for its 'special little meatballs'.
