Mario Laufer

Mario Laufer is a Cuban-born chef and the founder of Carrot Express, a health-focused restaurant chain with nearly 30 locations in Florida and New York. Fleeing to the United States at the age of five, Laufer's culinary journey began in the early 1990s when he sold food at his cousin's gas station in Miami Beach. His passion for fresh, healthy food led him to open the first Carrot Express in 2012, inspired by the 'simple but great' meals he had served previously.
