Polina Sychova is a restaurateur and entrepreneur who has been pivotal in promoting Ukrainian cuisine internationally. She partnered with a chef who served in the Ukrainian army during the ongoing conflict, helping to establish a new Ukrainian restaurant in London called Sino.
