Shaul Alkulumbri
Shaul Alkulumbri, known as Sami, was a Bulgarian immigrant who arrived in Israel at the founding of the state in 1948. In the early 1950s, he opened a small bakery in Jaffa that specialized in 'bourekas', a savory pastry that would become iconic in Israeli cuisine. His establishment, 'Sami Bourekas', evolved into a beloved chain, known for its warm service and traditional recipes, which resonated with generations of customers. After decades of operation, the last branch of 'Sami Bourekas' in Rehovot recently closed, marking the end of an era in Israeli food culture.
