Jonathan Bueno is a renowned chef and culinary consultant specializing in nikkei and Peruvian cuisine. He is the head chef at Mikka, a contemporary nikkei restaurant located in Samborondón, Ecuador, which has gained recognition for its innovative fusion of Japanese and Peruvian flavors. Since its opening in 2015, Mikka has become a staple in the gastronomic scene, with a menu that showcases a variety of dishes including sushi, ramen, and unique creations like nikkei de maguro and foie.
