Tim Polmear is one of the co-founders of Waubs Harbour Whisky, a distillery located in Bicheno, Tasmania, known for its maritime whisky. Alongside his brother Rob and partner Bec, Tim has dedicated years to developing a whisky that embodies the coastal character of Tasmania, utilizing local grains and innovative cask aging techniques.
