Simon Jing is the co-owner of Shang Lamb Soup, a popular eatery in Hurstville, Sydney, known for its authentic Northern Chinese lamb dishes. Originally from Taiyuan, Shanxi province in China, he moved to Australia in 2004 and, along with his partner Suki Wu, opened the restaurant six years ago to share the bold flavors of his homeland while supporting their family.
