Chef Alberto Herraiz, known as 'Don Alberto de la Mancha,' is a distinguished culinary figure from Cuenca, Spain. With a rich heritage of cooking, he took over the family restaurant in 1984 before training under renowned chefs like Ferran Adrià and Alain Ducasse. In 1997, he opened his first restaurant, Fogon, in Paris, where he became celebrated for his innovative Spanish cuisine, earning the distinction of being the first Spanish chef in France to receive a Michelin star in 2008. After a successful run, he transitioned to a new concept, opening Fogon Ultramarinos in 2019, a delicatessen celebrating his culinary roots and offering a menu inspired by the vibrant flavors of summer.
